Cabecou Feuille Cheese and Wine Pairing

Description: Cabecou Feuille is one of the smallest of French cheeses -- it is typically only about one ounce! It is a small disk of raw goat's milk from the plains of the Midi-Pyrenées region of France. The cheese is washed in prune eau-de-vie or brandy, wrapped in a chestnut leaf and dusted with a cracked black pepper. This cheese can be eaten fresh and it is creamy to crumbly, with a tangy and somewhat spicy flavor.

Wine Pairings:

Riesling: The earthy and pepperyness of the cheese combines with the bright fruit of the wine to create harmony. The high acids in the wine also balance out the goat taste of the cheese.
Pinot Noir: The earth, mineral and pepper notes cheese with so many savory herbal tones will pair well with a fruit forward Pinot Noir.
Shiraz: Shiraz tends to have a pepper, fruit forward flavor which compliments the spice and herbal notes in the cheese.
