Description: Chimay is a handmade Belgium cow's milk cheese with a good balance of bold aroma and gentle flavor. Since 1876, the Trappist monks of Scourmont have been producing this semi-hard cheese, using milk from their farm, and maturing the cheese in the vaulted cellars of their abbey. It is washed in Chimay beer producing a pleasant but pungent, full flavored cheese.
