Description: Traditionally, Gouda is produced in Holland, using cow's milk. But Gouda is such a popular cheese that it can now be found throughout the world. Aged Gouda is an entirely different product than its fresh-tasting unaged little sister. As the cheese ages and matures, it develops an intense sharpness and nutty flavor, reminiscent of parmigiano. The five year versions can have butterscotch, caramel tones.

Type of Milk: Cow

Where is it Produced: Holland

Wine Pairings:

| Port: The slight caramel and butterscotch tones of the cheese match well with the raisin sweetness of port. The cheese brings out the subtleties of the wine and vise versa. Aged gouda has enough structure to stand up to the higher alcohol in the wine without overpowering it.
