Wine and Cheese Pairing  > Roaring 40's Blue

Roaring 40's Blue Cheese and Wine Pairing

Description: From the island of Tasmania. Named for the trade winds that blow between Tasmania and Australia.

Type of Milk: Cow

Where is it Produced: Tasmania

Wine Pairings:

Merlot: This mild, yet rich well balanced blue will pair well with an aged Merlot that has a better balance of fruit and tannins.
Pinot Noir: This blue cheese has a rich, almost creamy flavor with a very pleasant nutty flavor. A pinot with big fruit notes and stronger tannins would be well suited for this mild blue.
