Vacherin Mont D'Or Cheese and Wine Pairing

Description: The Franche-Comte region is the coldest region in France. During the winter, local farmers made small rounds of cheese to utilize the winter milk that was so difficult to deliver to the Comte cooperatives. The result was “Vachelins,� made in this region since the 12th century. Louis XV loved this type of cheese for the smoothness and the consistency of paste. Vacherin Mont d'Or (golden mountain) is a washed rind cheese that is so creamy that it can be eaten with a spoon. Many cut the top off so it can be served by the spoonful, others open it up and let it seep out while eating the delicious rind with it. Each wheel is wrapped with a resinous, aromatic strip of spruce bark. This prevents this creamy cheese from collapsing and has the added benefit of imparting its flavor to the cheese. Vacherin has an amazing woodsy, nutty aroma and flavor and pairs well with fruit and fruity wines such as Beaujolais or Côte du Jura. Vacherin Mont d'Or is best enjoyed within seven days.
