Description: Also known as Blue de Septmoncel or Blue du Haut Jura, Bleu de Gex is a soft blue cheese with nice richness. It is produced only from specific herds of cows that graze on the mountain grasses of the Jura, and you can taste the earthy highlands in the cheese. Though this is a heavy cheese, the flavor is suprisingly mild, with earthy, mushroom and nut overtones. The veins are typically light green and pale blue in color.
