As Pinot Noir matures, it displays complex characteristics including chocolate, game, figs, prunes, smokiness, truffles, and violets. France's Burgundy region is the largest cultivator of Pinot Noir. In the United States, California's cooler regions such as Carneros, the Russian River Valley, parts of Santa Barbara, and Oregon have also become a haven for Pinot Noir, due to optimal growth conditions.
